Improving milk quality to prevent microelement deficiencies: a socio-hygienic perspective on adding bioavailable trace elements

Based on the study of actual nutrition and availability macro- microelements, it was found that adult population North Caucasus Federal District (NCFD) Russia belongs to risk group for development micronutrient insufficiency associated with a low content in diet several essential elements (copper, zinc, calcium, selenium), which are priority correction. This is because 89% NCFD has significantly out balance both quantitatively qualitatively, negatively impacting nutritional status dispersion trace elements. It significant part characterized by lack dairy products (59.8%), as well insufficient intake vitamins B2, B6, C, PP, folic acid, I, Se, Cu, Zn, Mg, Ca, fiber, polyunsaturated fatty acids, tryptophan.
